This past weekend my family and some friends went away camping. Believe it or not I absolutely love camping. Considering how high maintenance I am, this shocks some people. But let’s get something straight, we camp in a trailer. There is absolutely no sleeping on the ground, in a wet, damp tent, walking 20 minutes to a dirty bathroom and putting up with no AC happening when we camp. Call it what you want (princess camping some would say), but it is the best way to camp. It’s relaxing, fun, and of course we get to eat the most delicious food all weekend long. When it comes to camping, I like to bring things that I can make ahead of time so it’s ready and easy to just pull out of the fridge.
I made a delicious, fresh, healthy salsa and it was a huge hit. It took me about 10 minutes max to whip up this salsa ahead of time. Then once camping I pulled it out of the fridge, opened up a bag of tortilla chips and we were good to go.
Fresh Cilantro Salsa
- 1 container of grape tomatoes
- 1/2 red onion
- 1 largw yellow pepper
- big handful of cilantro
- 2 limes
- olive oil
- sea salt & pepper
Directions: chop everything up into tiny pieces. mix together. squeeze fresh lime juice, add a drizzle of olive oil, some garlic and sea salt and pepper. mix well together, voila.
Such a simple yet delicious snack to pull out for everyone to enjoy in between bike rides and watching the Jays game. (Yes we hooked up a tv and watched the Jays game while camping, I never said we rough it.)
Get out there; go cottaging, camping, relaxing. This is the absolute best time of year to go find new things to do, and try out new recipes to enjoy with friends.
