Fall Calls for Yoga & Stew

Rainy cold weather calls for home comforting, delicious meals and yoga. Last night was the perfect weather for a stew. And after stew called for an amazing, hard, getting our butts kicked yoga class. Nothing beats doing yoga in a warm, candle lit room when it is chilly and windy outside.  I decided to make it in the crock pot, because in my opinion stews always have way more flavour when the ingredients have been cooking together all day long. So this meal ended up being SO simple. Throw all the food in the crock pot before work, turn it onto low, and when you’re home from work it’ll be ready to enjoy! 

I took this recipe from the amazing cook book Oh She Glows (which you can find at either Costco or on Amazon.ca). I changed it to meet my likings a bit more, and it turned out great. 

Chickpea & Tomato Stew  

Ingredients: 

  • 1 tsp olive oil 
  • 1 medium sweet onion 
  • 3 cloves garlic 
  • 1 red pepper 
  • 1/2 a jalepeno (optional)
  • 1 medium sweet potato 
  • 1 can diced tomatoes with juices 
  • Sea salt and ground pepper 
  • 4 cups chicken broth (or vegetable) 
  • 1 1/2 tsp Chili powder 
  • 1/4 tsp cayenne pepper 
  • 1 can chickpeas 
  • 2 handfuls spinach 
  • 1 handful kale 
  • 2 cups quinoa 
  • Feta cheese 
  • Sliced almonds 

Directions: slice all veggies into chunks, including sweet potato. Throw everything together in the crock pot, except quinoa, feta and almonds. Put on low, stir whenever possible. Cook quinoa according to package. Place stew on top of quinoa, add a sprinkle of feta and almonds, voila. 

This is such a tastey stew and my favourite part, it makes such a big batch that you can freeze it in individual containers for lunches. 

Enjoy this beautiful, crisp fall day. Pull out those boots and scarves, it’s finally time to wear them. Get your butt to yoga, and enjoy life.
