Hello February. It’s so nice to see you! February is one of those months, that although it is still Winter it gives you hope that spring is coming. A few more weeks of this crazy white stuff called snow, and in no time we’ll be wearing our light spring jackets, leaving the mittens at home and soon throwing on those sandals. But in the meantime, why don’t we enjoy life. So what if Spring is on it’s way, right now, right here, we have February. A great month, full of beautiful white snow, sunshine, a day all about love and even a bonus long weekend to really brighten it up. So live in the moment, in the now, and lets enjoy this last bit of winter.
It’s time to stay in side, enjoy the fire and make yummy soups. Here’s a recipe that my friend Kim sent me the other day and she said it is so deliciously good that I had to put it on my blog. (Here is the link to the original recipe which we have changed a bit to make healthier.) This soup is perfect for many things, it’s great to make a large batch and freeze for lunches, or to freeze so you have a meal ready on a busy night, or to bring to a pot luck.
Sweet Potato and Garlic Soup
-5 sweet potatoes (peeled and cubed)
-2 onions chopped
-1 head of garlic
-2 tbsp. olive oil
-6 cups low sodium chicken broth
-1/4 cup plain Greek yogurt
-2 tbsp. chopped chives
Directions: Heat oven to 400°F. Toss potatoes, onions and garlic with oil; spread onto foil-covered rimmed baking sheet. Bake 1 hour or until vegetables are tender; spoon into large saucepan. Stir in broth. Bring to boil on medium-high heat. Remove from heat; cool slightly. Add to blender, in batches, with greek yogurt; blend until smooth. Return to saucepan. Cook on medium heat 5 min. or until heated through, stirring occasionally. Serve topped with chives.
So other than eating soups and relaxing by the fire, want to know the absolute best part about February? February is the month which has my second favourite day of the year (Christmas is of course #1 in my books), PLUNGER PLOP! If you’re from the area, you will have at least heard of it if not participated in this town event. It is the one winter event that I absolutely love. 5 more sleeps, and Plunger Plop will have arrived!!! Here are a couple pictures so you can all understand what exactly I am talking about.
