The time has come, Christmas over and New Years has arrived. When I was young I remember my parents always saying how time goes by faster and faster the older you get, and I thought they were crazy. How is that possible? There’s always the same amount of days and hours in a year whether you’re 10 or 25, but now I get it. Time sure does fly. It feels like yesterday that I was celebrating New Years last year.
This has been one interesting year, to say the least. I’ve had my lowest of lows as well as some of my highest of highs. I learnt more about myself in this one year, then I have in the previous 24. I realized just how strong I was, and how emotionally strong I maybe wasn’t. But after a year of learning and growing I have learnt a life lesson that has been more important than anything I have ever learnt through all my education, everything happens for a reason. People come and people go, people can love and people can be mean. But when it comes down to it, everyone needs to love themselves. It’s much easier to love others when you truly love yourself. For many months this year I didn’t love myself, but finally, I can now honestly say I love me. I have worked very hard, with some very down days and some very good days…but I am so happy and proud of myself to say that I finally am in love with myself again. And I owe a huge part of this to my friends and family who have been by my side through everything, and who have spent hours on end listening and talking to me.
I am the last person to set New Years Resolutions, I think it’s so important to have goals and dreams every day of the year and not just once a year on December 31 because it’s the thing to do. I have dreams, big dreams, and I have goals…and I am going to absolutely continue on my self love journey. Within this journey includes two major things, healthy and fashionable living. Two things that bring so much happiness into my life.
If you are staying in with loved ones tonight to ring in the New Year and want to cook a fancy but incredibly easy dinner, I have just the recipe for you. It doesn’t take long at all, and tastes so yummy. This can be either a gluten free meal or regular, use whichever kind of pasta you desire.
Goat Cheese & Spinach Spahgetti
-Catelli Gluten Free spaghetti (or regular spaghetti if not GF)
-sea salt and pepper
-boneless skinless chicken breast (optional – bake chicken and cut into slices and add to pasta at the end if desired to include chicken)
Directions: Cook pasta according to box (if GF add salt to the boiling water, this helps immensely in preventing stickiness). In frying pan, sauté red pepper, onion and mushrooms in olive oil. Sauté on low-medium heat for approx. 10 minutes. After 10 minutes, add both tomatoes and spinach. Continue sautéing on low for another 10 min. Then add the pasta to the pan. Mix together and add goat cheese. Let simmer on low for approx. 5 minutes (putting a cover over the frying pan will help the goat cheese melt). Add a drizzle of olive oil, sea salt and pepper and mix well. Voila, ready to serve!
Along with cooking, as some of you may know (haha who am I kidding, everyone knows!) I love fashion. Love, love, love it. Fashion in all colours and shapes. Not just clothes, fashion in my mind includes shoes, makeup, hair, jewelry, nails, just about everything. I have talked about the store bluboho in previous posts, it’s a little boutique store downtown Oakville (they recently added a location downtown Toronto as well) and its amazing. I love everything they sell, but it’s fairly pricey. We all know how much I like deals, and I don’t think I have ever seen a sale at this store. So because of this I had to settle for never buying anything, but I wanted to SO bad. Well…a special someone bought me a bracelet from there for Christmas and lets just say I was one excited girl. The best part about this bracelet is you can so easily build on it with other jewelry you already have, and also add more bluboho pieces when you get them (hint hint to a certain someone who’s reading this!).
Dream big and love even bigger. Life is short, and if I can give just a little tad bit of advice from what I’ve learnt over this past year…everything happens for a reason. It may not make sense right now, it may not even make sense in two years…but eventually it will. Everything will make sense. So love yourself, love others and enjoy every last minute of 2015 because you deserve it.
