Breakfast is the most important meal of the day, but for some of us it can be very difficult to think of fast, easy and nutritious ideas especially if you’re gluten free. But guess what? It’s really quite easy! Just think outside the box, you can’t eat bread, so what?
A great way to start every single morning before you even eat is a cup of warm lemon water. And I’m talking freshly squeezed lemon juice, not lemon juice from a bottle. Some of the benefits to drinking this are:

Aren’t those the most amazing benefits?! Coffee smoffee, everyone try drinking warm lemon water instead!! Ok so I understand giving up coffee completely is totally unrealistic for some, but try replacing one coffee a week with a cup of lemon water, then try two days a week and so on. (You’ll thank me once you feel totally amazing going into work!) Now as for the food, poach two eggs, place them on a rice cake (most mornings I put two eggs onto one rice cake, but if you’re real hungry you can use two rice cakes) sprinkle some hemp seeds, add a little avocado and cut up a banana for the side. Voila. Difficult? Not at all. Clean up is easy since to poach eggs all you need is a small pot with a little water. This breakfast gives you your protein to get you started off right in the morning, as well as the rice cake gives you the bulk you’re missing when you remove bread. Another option, gluten free bread, a good brand is kinnikinnick. Simple way to poach eggs:
Boil a couple inches of water with a small amount of vinegar in it. Once boiling, bring down to a simmer. Break eggs into the water, place lid on pot and simmer for 4 minutes. Complete.
Another option for a more exciting Saturday morning breakfast is pancakes. But how do you make gluten free pancakes? Well there are many delicious recipes but if you’re just starting out, an easy way to do it is a box recipe. (I never thought I would be saying this. I hate boxed crap, any and all of my baking comes from scratch.) BUT this pancake mix is just so easy. You can find it at Wal Mart in the States and to be honest, I rarely buy it so I am not even sure where else it’s available. But this brings me to another point, always always always check out grocery stores gluten free aisles when you’re in different countries and cities. You never know what cool and different stuff you might find. And at Wal Mart’s in Buffalo you always find MUCH cheaper and different gluten free products.
Lastly, who really wants to just eat plain boring old pancakes? Two things you must always add to pancakes, natural real maple syrup (yes I may be suggesting a box pancake mix but I will NEVER and I mean NEVER suggest fake maple syrup. It’s crap. Pure crap.) and secondly you must always add fresh fruit, it brightens up the flavour of any pancake.
So there you have it, breakfast ideas that are simple and tasty. I suggest eating the eggs as a more regular basis breakfast and the pancakes as a treat, but we all need a treat now and then right?!
